Make the honey syrup: stir 2 parts honey into 1 part warm water until fully dissolved. Cool completely before using.
Chill a champagne flute in the freezer.
Add the rum, lime juice, and honey syrup to a cocktail shaker with a generous handful of ice.
Shake hard for about 15 seconds until well chilled.
Strain into the chilled flute.
Top gently with Prosecco, pouring slowly down the side of the glass.
Garnish with a lime twist or lime wheel on the rim.

Honey Syrup: combine 2 parts honey with 1 part warm water and stir until dissolved. No heating needed. Keeps in the fridge for up to two weeks. The same syrup is used in the Bee's Knees cocktail.The 2:1 honey syrup is richer and more concentrated than a standard 1:1 and the honey flavor comes through much more clearly in the finished drink.Pour the Prosecco slowly down the side of the glass to keep the bubbles.Any dry sparkling wine works in place of Prosecco.
