A fresh kiwi cucumber margarita with tequila blanco, muddled ripe kiwi, thin cucumber slices, and fresh lime juice. Served over ice with a lime zest salt or sugar rim.

Instructions
Mix the salt (or sugar) with the fine lime zest on a small plate. Run a lime wedge around the rim of a rocks glass, then dip the rim in the mixture to coat.
Add the chopped kiwi and cucumber slices to a cocktail shaker. Muddle firmly, but stop before the kiwi seeds get mashed.
Add the tequila, lime juice, triple sec, and simple syrup. Fill the shaker with ice.
Shake hard for 15 seconds, until the shaker is frosty on the outside.
Double strain into the rimmed rocks glass filled with fresh ice. Use a fine mesh strainer over the cocktail strainer to catch the seeds and pulp.
Garnish with a cucumber ribbon and a kiwi slice. Serve immediately.
Notes
Kiwi ripeness: Ripe kiwi should give a little when pressed gently. Ripen on the counter for a few days if needed.Kiwi variety: Golden kiwi is a sweeter, less tart option and works well too.Cucumber: English or Persian cucumbers work best because of the thin skin and fewer seeds. If using a regular cucumber, peel it first.Double straining: Essential here. A fine mesh strainer catches the kiwi seeds and cucumber pulp so you get a clean drink.For a gin version: Swap the tequila for a London dry gin.
