Pineapple Coconut Margarita

Ingredients
 
 

For the rim

  • 2 tbsp desiccated coconut for toasting
  • lime wedge to moisten the rim

For the drink

  • 2 oz tequila blanco
  • 1 oz fresh lime juice
  • 1 oz pineapple juice carton or fresh
  • 0.5 oz cream of coconut not coconut cream. Coco Lopez, or use homemade cream of coconut. Stir the can well before measuring
  • 0.5 oz triple sec
  • ice

To garnish

  • pineapple wedge

Instructions
 

  • Toast the desiccated coconut in a dry pan over medium heat, stirring constantly, until golden. Tip out onto a plate to cool.
  • Run a lime wedge around the rim of a rocks glass, then dip the rim in the toasted coconut to coat.
  • Add the tequila, lime juice, pineapple juice, cream of coconut, and triple sec to a cocktail shaker. Fill with ice.
  • Shake hard for 20 to 25 seconds, until the shaker is frosty on the outside and you can hear the ice breaking down.
  • Fill the rimmed rocks glass with fresh ice. Strain the margarita over the ice.
  • Garnish with a pineapple wedge.

Notes

Cream of coconut vs coconut cream: These are different. Cream of coconut is sweetened and thick, used in piña coladas (Coco Lopez is the most common brand, or use my homemade cream of coconut). Coconut cream is unsweetened and thinner. For this recipe, you need the sweetened cream of coconut.
Stir the cream of coconut: The can separates in storage. Stir it hard or shake the container before measuring.
Shake harder than usual: 20 to 25 seconds. Cream of coconut needs help emulsifying.
Pineapple juice: Carton or fresh both work.
