Raspberry Rose Tonic

A pretty floral mocktail with muddled fresh raspberries, raspberry syrup, lemon juice, and a touch of rose water, topped with tonic water. Refreshing, lightly bitter, and ready in five minutes.

Ingredients
 
 

  • 5 fresh raspberries plus extra to garnish
  • 0.75 oz raspberry syrup
  • 0.75 oz fresh lemon juice
  • 0.25 tsp rose water
  • 2.5 oz tonic water to top, or up to 3 oz / 90ml
  • ice
  • dried rose petals to garnish, optional

Instructions
 

  • Add the raspberries to a glass and muddle well until the berries are broken down and juicy.
  • Add the raspberry syrup, fresh lemon juice, and rose water. Fill the glass with ice.
  • Top with tonic water and stir gently once.
  • Garnish with a few fresh raspberries and dried rose petals.

Notes

Rose water: Use exactly 1/4 teaspoon. Rose water is very strong.
Tonic water: Use anywhere from 2.5 to 3 oz (70-90ml) depending on how strong you want the drink. Start with less and top up to taste.
To make it a cocktail: Add 1.5 oz (45ml) of gin before the tonic water. A floral or classic London Dry gin works beautifully here.
Raspberry syrup: You can make your own raspberry syrup ahead of time. If you don't have any, use simple syrup and increase the fresh raspberries slightly for more berry flavour.
