Instructions
Add the fresh raspberries, mint leaves, raspberry syrup, and lime juice to the bottom of a tall glass.
Muddle everything together gently - the raspberries break down quickly with just a light press so the mint won't get over-worked.
Fill the glass with ice.
Top with soda water and stir gently.
Garnish with a sprig of mint, a few raspberries, and a lime wedge.

Raspberry Syrup:To make the raspberry syrup: combine 1½ cups raspberries, 1 cup sugar, 1 cup water, and 1½ tsp lemon juice in a saucepan. Simmer 10 minutes, strain well through a fine sieve to remove seeds, and cool completely. Full recipe at raspberry simple syrup.Raspberries are soft enough that you can muddle them together with the mint - they break down with just a light press so the mint won't get over-worked.Fresh lime juice only. Bottled tastes flat in a drink this simple.To make for a crowd, multiply and build in a pitcher. Add soda water just before serving.
