Raspberry Mojito Mocktail

This raspberry mojito mocktail is one of my favorite mocktails to make in summer. Fresh raspberries muddled with raspberry syrup, mint, and lime, topped with soda water. It’s tart, a little sweet, and really refreshing.

About this raspberry mojito mocktail

This is a non-alcoholic mojito made with homemade raspberry syrup, fresh lime juice, mint, and soda water. I also muddle in fresh raspberries, which gives you real fruit flavor and a little texture in the drink rather than just sweetness from the syrup.

The technique here is slightly different to my blueberry mojito mocktail and strawberry mojito mocktail. With those I muddle the fruit first and the mint separately because the fruit needs a harder press. With raspberries you can muddle everything together because they’re so soft they break down with just a light press, which means the mint doesn’t get over-worked in the process.

Key ingredients and why

  • Raspberry syrup: Adds sweetness, color, and concentrated raspberry flavor. My homemade raspberry syrup is quick to make and keeps for two weeks in the fridge.
  • Fresh raspberries: 6 per drink, muddled first before the mint goes in. They add real fruit flavor and texture that the syrup alone can’t give you.
  • Fresh mint: Added after the raspberries are muddled and pressed lightly. Keeps the flavor fresh without turning bitter.
  • Fresh lime juice: The tart element that balances the sweetness. Always fresh, never bottled.
  • Soda water: Tops the drink and adds fizz. Add as much or as little as you like.

Method

  1. Add the fresh raspberries, mint leaves, raspberry syrup, and lime juice to the bottom of a tall glass.

  1. Muddle together until the raspberries have broken down.

  1. Stir gently.

Ingredients
 
 

  • 1.5 oz raspberry simple syrup
  • 1 oz fresh lime juice
  • 6 fresh raspberries
  • 6 fresh mint leaves
  • 3-4 oz soda water to top
  • ice
  • fresh mint, raspberries, and a lime wedge to garnish

Instructions
 

  • Add the fresh raspberries, mint leaves, raspberry syrup, and lime juice to the bottom of a tall glass.
  • Muddle everything together gently – the raspberries break down quickly with just a light press so the mint won't get over-worked.
  • Fill the glass with ice.
  • Top with soda water and stir gently.
  • Garnish with a sprig of mint, a few raspberries, and a lime wedge.

Notes

Raspberry Syrup: To make the raspberry syrup: combine 1½ cups raspberries, 1 cup sugar, 1 cup water, and 1½ tsp lemon juice in a saucepan. Simmer 10 minutes, strain well through a fine sieve to remove seeds, and cool completely. Full recipe at raspberry simple syrup.
Raspberries are soft enough that you can muddle them together with the mint – they break down with just a light press so the mint won’t get over-worked.
Fresh lime juice only. Bottled tastes flat in a drink this simple.
To make for a crowd, multiply and build in a pitcher. Add soda water just before serving.
