This is a non-alcoholic mojito made with homemade blueberry syrup, fresh lime juice, mint, and soda water. I also muddle in about 15 fresh blueberries, which gives you little bursts of real blueberry flavor in the drink rather than just sweetness from the syrup. The combination of both is what makes this version really good.
The muddling step is important. You muddle the fresh blueberries first to break them down and release their juice, then add the mint and just press it lightly a couple of times. Muddling mint too hard shreds the leaves and makes the drink taste bitter and grassy, so keep it separate from the harder muddling.
