While a classic mojito recipe is a white rum cocktail that doesn’t include blueberries, this blueberry mint mocktail version is a wonderful variation. The fact that it’s alcohol free means everyone can enjoy it.

The simple syrup
This blueberry syrup makes enough for several drinks. Leftover syrup can be stored in the fridge for up to 2 weeks.
- Blueberries – These can be fresh blueberries or frozen blueberries.
- Sugar
- Lemon juice – just a little to enhance the blueberry flavor.
- Water

Method
Combine blueberries, lemon juice, sugar, and water in a medium saucepan over medium heat to make the blueberry syrup.
Once the first bubbles appear and the mixture starts simmering, lower the heat and let the mixture simmer for 10 minutes, stirring occasionally.

After simmering, remove the heat and let it cool to room temperature.
Balance a fine mesh strainer, muslin cloth, or coffee filter over a bowl and tip in the blueberry mixture. Let it drain completely.
Pour it into a clean container.
Top tip – Pour the remaining syrup into ice cube trays and freeze them so you have individual servings.
Add the blueberry syrup, lime juice, and mint leaves to the bottom of the glass. Use a cocktail muddler or the end of a wooden spoon to muddle the mint leaves. This releases the mint oils.
Add a handful of ice to the glass. Top with soda water and garnish with a mint sprig, fresh blueberries, and lime wedges.
Give it a quick stir, then serve the mixed drink right away. Store any leftover blueberry syrup in an airtight container in the refrigerator for up to 2 weeks.
Variations
