Cherry Mojito

Cherry simple syrup

I love using flavored simple syrups in cocktails because it is a really easy way to bring in flavors and colors that are often richer and more pronounced than just muddling fresh fruit. A homemade cherry simple syrup can also be made using frozen cherries, so it’s possible all year Almonds and cherries have are both in the prunus genus and have similar flavor compounds. That’s why almond extract works so well with cherries—it brings out their natural flavor.

Method

  1. Start with the simple syrup so it can cool.

  1. Add the cherry simple syrup and rum (or sparkling water for a mocktail). Stir gently to combine.

Ingredients

  • 8 fresh mint leaves
  • 1 oz (30ml) fresh lime juice
  • 1 1/2 oz (45ml) white rum.
  • 1 oz (30 ml) cherry simple syrup
  • Soda water for topping
  • Ice
  • Fresh cherries, lime and mint for garnish

Instructions

  1. Add the mint leaves and lime juice to a tall glass. Gently muddle with a muddler or the back of a spoon to release the mint’s flavor.
  2. Add the rum and cherry simple syrup and stir gently to combine.
  3. Fill the glass with ice and top with soda water
  4. Garnish with a lime wedge, fresh cherries, and fresh mint.

Notes

Cherry Simple Syrup

  • 1 ½ cups fresh or frozen cherries
  • 1 cup water
  • 1 cup granulated white sugar
  • ½ tablespoon lemon juice
  • ¼ teaspoon almond extract
  1. Combine cherries, sugar, water, lemon juice, and almond extract in a medium saucepan over medium heat. Stir until the sugar dissolves, then bring to a boil.
  2. Reduce heat and simmer for 5 minutes, mashing the cherries slightly. Remove from heat and let cool to room temperature.
  3. Strain through a cloth or fine-mesh strainer, pressing gently to extract the syrup. Store in an airtight container once cooled.
