This Rhubarb Gin Sour is a gorgeous summer cocktail. The star of this drink is the homemade rhubarb simple syrup. By combining gin, lemon juice, and sweet rhubarb syrup, you get a perfectly balanced beverage that’s both refreshing and delicious.

A gin sour is a timeless cocktail known for its balance of sweet and tart flavors. The tartness comes from lemon or lime juice, and it’s typically topped with a frothy head created by egg white (or aquafaba for a vegan alternative).

Ingredients

  • Rhubarb Simple Syrup: Making your own rhubarb simple syrup is easy. Prepare it ahead of time so it has time to cool.
  • London Dry Gin: You can use any gin, but a London dry gin is a high-quality choice, infused with botanical flavors through re-distillation.
  • Fresh Lemon Juice: I always use fresh lemon juice, not bottled.
  • Egg White: This gives the drink a layer of white foam on top.
