Earl Grey Simple Syrup

Ingredients

- Earl Grey Tea Bags or loose-leaf tea. The star ingredient provides the distinct bergamot and black tea flavors. Use about 1/2 tablespoon loose-leaf tea per tea bag.
- White sugar. Granulated cane sugar. You could use raw sugar or pure cane sugar but steer clear of light brown sugar to maintain the authentic flavor. The quantity may seem large, but remember, it’s a syrup and is meant to be sweet.
- Water. This is the base of the syrup, helping to dissolve the sugar and steep the tea.
Method
- In a small saucepan, combine 1 cup water with 1 cup sugar. Heat over medium heat and stir until the sugar has dissolved and the mixture comes to a boil.
- Take it off the heat and add in 3 Earl Grey tea bags. Let them steep in the sugar syrup until it has cooled to room temperature.
- Transfer the earl grey simple syrup to a clean storage container or glass jar, and store it in the refrigerator for up to two weeks.
