Mojito Mocktail

This mojito mocktail is fresh and really refreshing. It’s got fresh mint, lime juice, and a coconut water and soda water base that gives it a subtle tropical sweetness without being over the top.

About this recipe

This is a classic mojito made without the rum. Fresh mint, lime juice, sugar or simple syrup, and a mix of coconut water and soda water. The coconut water is my twist on the classic and I like it because it adds a natural sweetness and a very subtle tropical flavor that works really well with the lime and mint. You can use all soda water if you want though, it’s great either way.
The mint is the most important part of a mojito and how you handle it matters. You want to press the mint gently rather than muddle it hard. Just enough to bruise it slightly and release the oils and a few light presses with a muddler or the back of a spoon is all you need.
For the sweetener, you can muddle 2 tsp of white sugar directly in with the mint, which is the classic method, or you can use simple syrup, which dissolves more cleanly. Both work well and it’s just a personal preference. For more alcohol-free drink ideas, browse my mocktail recipes.

Method

  1. Add the mint leaves to the bottom of a tall highball glass. Add the sugar or simple syrup and lime juice.

  1. Press the mint gently a few times with a muddler or the back of a spoon. You’re just releasing the oils, don’t shred the leaves.

  1. Fill the glass with ice. Pour over the coconut water and soda water.

Tips

  • Press the mint gently. A few light presses is enough. Over-muddling releases bitter compounds and makes the drink taste grassy.
  • Fresh lime juice only
  • Coconut water vs all soda. The coconut water adds a subtle natural sweetness that’s really nice with the mint and lime but all soda water works perfectly well too.
  • Making it for a crowd. Multiply the recipe and build it in a large pitcher. Add the soda water just before serving so it stays fizzy.
  • Try other flavors. This method works really well with blueberry syrup and fresh blueberries for a blueberry mojito mocktail, or strawberry syrup and fresh strawberries for a strawberry mojito mocktail.

Ingredients
 
 

  • 10 fresh mint leaves
  • 2 tsp white sugar or 0.5 oz / 15 ml simple syrup
  • 0.75 oz fresh lime juice
  • 2 oz coconut water or replace with extra soda water
  • 2 oz soda water
  • ice
  • fresh mint sprig and lime wedge to garnish

Instructions
 

  • Add the mint leaves, sugar or simple syrup, and lime juice to a tall highball glass.
  • Press the mint gently a few times with a muddler or the back of a spoon to release the oils. Don’t over-muddle.
  • Fill the glass with ice.
  • Pour over the coconut water and soda water.
  • Stir gently and garnish with a fresh mint sprig and a lime wedge.

Notes

Press the mint gently, just enough to release the oils. Over-muddling shreds the leaves and makes the drink bitter.
If using simple syrup instead of sugar, add it with the lime juice before pressing the mint.
Swap the coconut water for more soda water if you prefer a classic base.
To make for a crowd, multiply and build in a pitcher. Add the soda water just before serving.
