This passionfruit spritz mocktail is tropical, refreshing, and really pretty in the glass. It’s got fresh passionfruit pulp, orange juice, vanilla syrup, and lime, all topped with soda water.

About this mocktail
This is a built-in-the-glass mocktail made with fresh passionfruit pulp, orange juice, vanilla simple syrup, fresh lime juice, and soda water. It’s tropical and slightly floral, with the vanilla rounding out the tartness of the passionfruit and lime nicely. The orange juice gives it body and sweetness without making it heavy.
The vanilla syrup adds a soft, rounded sweetness that ties all the flavors together. You can use my homemade vanilla simple syrup or just dissolve a little sugar with a splash of vanilla extract if you don’t have any made up.

Key ingredients and why
- Passionfruit pulp: The star of the drink. Fresh is best but defrosted pulp from frozen works great too! The seeds are fine to leave in, they look beautiful in the glass.
- Fresh orange juice: Adds body, sweetness, and a tropical citrus flavor that pairs really well with passionfruit. I use fresh but if you’ve only got carton orange juice that completely fine here.
- Vanilla simple syrup: Rounds out the tartness and adds a soft sweetness. It’s subtle but it ties everything together.
- Fresh lime juice: A small amount but it brightens the whole drink and stops it feeling flat.
- Soda water: Tops the drink and adds fizz. Pour it in gently and stir once or twice so you don’t lose the bubbles.
Method
- Divide the passionfruit pulp, orange juice, vanilla syrup, and lime juice between two wine glasses.

- Give it a gentle stir to combine, then fill the glass with ice.

- Top with soda water and stir once more very gently. Garnish with a halved passionfruit and an orange slice on the rim.
Tips
- Pour the soda water slowly. Add it gently down the side of the glass and stir just once or twice so it stays fizzy.
- Adjust to taste. More lime if you like it tart, more vanilla syrup if you like it sweeter.
- Making it for a crowd. Multiply and build in a large jug. Add the soda water just before serving so it stays fizzy.
- Add a spirit. A splash of vodka or white rum turns this into a proper passionfruit spritz cocktail.

- 4 oz fresh orange juice
- 1 oz vanilla simple syrup
- 0.75 oz fresh lime juice
