Strawberry Lemonade Mocktail

I love this strawberry lemonade mocktail. It’s sweet and tangy with a really good strawberry flavor, and once you’ve got the syrup made it comes together in about two minutes. Using strawberry syrup instead of fresh fruit means no muddling or blending, a better color, and the strawberry flavor is more consistent too.

Key ingredients and why

  • Strawberry syrup: The base of the drink. It brings all the strawberry flavor and sweetness. I use my homemade strawberry syrup – make it ahead so it’s cool before using.
  • Fresh lemon juice: This is what gives it that real lemonade tang. Always fresh, never bottled.

Variations

  • Swap strawberries for raspberries: Raspberries make a great substitute. You can make a raspberry simple syrup the same way and use that as the base.
  • Add a strawberry sugar rim: For an extra touch, coat the rim of the glass in a mix of sugar and freeze-dried strawberry powder. Run a lemon or lime wedge along the edge, then dip the glass into a small plate of strawberry sugar.

Tips

  • Make the syrup ahead. The strawberry syrup needs to be completely cool before using. It keeps in the fridge for two weeks.
  • Adjust to taste. Add a touch more lemon juice if you like it more tart, or a little more syrup if you like it sweeter.
  • Making it for a crowd. Just multiply the recipe and build it in a jug. Add the soda water just before serving so it stays fizzy.
  • Strawberry sugar rim. For something a bit extra, run a lemon wedge around the rim and dip the glass into a mix of sugar and freeze-dried strawberry powder.
  • Swap the strawberry. This works just as well with raspberry syrup if you want a different berry flavor.

  • 6 oz soda water to top, 6-8 oz total

Notes

Strawberry Syrup: To make the strawberry syrup: combine 1½ cups strawberries, 1 cup sugar, and 1 cup water in a saucepan. Simmer for 10 minutes, strain well through a fine sieve, and cool completely. Full recipe at strawberry simple syrup.
Make your strawberry syrup ahead of time so it’s completely cool before using. It keeps in the fridge for two weeks.
Adjust the lemon juice and syrup ratio to taste – more lemon for tart, more syrup for sweet.
