Strawberry Gin Fizz

This strawberry gin fizz is fruity and refreshing. It’s made with fresh muddled strawberries, homemade strawberry syrup, gin, and a splash of soda water that gives it a lovely fizz.

The strawberry gin fizz is a fruity, bubbly cocktail made with fresh strawberries, gin, homemade strawberry simple syrup, fresh lemon juice, and club soda. It’s a straightforward cocktail to put together and a great choice when strawberries are in season, and you want something light and refreshing.

In this drink you get strawberry flavor from two places: the muddled fresh strawberries and the homemade strawberry simple syrup. The muddling gives you that real, fresh fruit taste and a beautiful pink color, while the syrup adds a smooth sweetness. A squeeze of fresh lemon juice balances the sweetness, and the soda water on top keeps it light.

The gin brings its botanical depth without overpowering the strawberries. A London Dry gin works well here, but really any gin you enjoy will do.   • Fresh lemon juice: Adds a zesty brightness that balances the sweetness from the syrup and strawberries. Always use freshly squeezed.
  • Gin: The base spirit. Its botanicals add depth and complexity without overpowering the fruit. A London Dry gin works well.
  • Club soda: Tops the drink off with fizz and keeps it light and refreshing. Pour it in last and stir gently so you don’t lose the bubbles.

  1. Prepare your homemade strawberry simple syrup in advance so it has time to cool.

  1. In a cocktail shaker, muddle the fresh strawberries and mint with the lemon juice and simple syrup until the strawberries are well crushed and the mixture is juicy.

  1. Add the gin and a handful of ice to the shaker. Shake well until the mixture is chilled.

  1. Strain the mixture into a glass filled with ice, discarding the solids.

  1. Top with club soda and stir gently to combine.

Tips

  • Make the syrup ahead. The strawberry simple syrup needs to cool before using, so make it a few hours ahead or the day before. It keeps in the fridge for up to two weeks.
  • Muddle well. Really crush the strawberries so they release all their juice. The more you break them down, the more flavor and color you’ll get.
  • Strain thoroughly. Straining removes the strawberry seeds and pulp for a smoother drink. A fine mesh strainer works best.
  • Adjust the sweetness. Start with half an ounce of syrup and taste. Add more if you like it sweeter, or add a touch more lemon if you want it tangier.
  • Frozen strawberries work too. If strawberries aren’t in season, defrosted frozen ones muddle just as well and still give great flavor.
  • Try a strawberry sugar rim. Mix a tablespoon of freeze-dried strawberry powder with a teaspoon of sugar. Run a lemon wedge around the rim of the glass and dip it in. It looks beautiful.

  • Adjust the amount of syrup to taste. Start with 1/2 oz (15 ml) and add more if you’d like it sweeter.
  • For a raspberry version, swap the strawberries for raspberries and use raspberry simple syrup instead.
  • For a pretty strawberry sugar rim, mix freeze-dried strawberry powder with sugar and dip the rim of the glass.
