Ingredients

  • 4-5 strawberries fresh or frozen (thawed), hulled and sliced
  • 2 mint leaves optional
  • 1/2 oz lemon juice fresh
  • 1/2 oz strawberry simple syrup
  • 2 oz gin
  • 2 oz club soda
  • Ice
  • Lemon twist fresh strawberry and mint leaves for garnish

Instructions

  • In a cocktail shaker, muddle the fresh
strawberries and mint with the lemon juice and simple syrup until the
strawberries are well crushed and the mixture is juicy.
  • Add the gin and a handful of ice to the shaker.
Shake well until the mixture is chilled.
  • Strain the mixture into a glass filled with ice,
    discarding the solids.
  • Top with club soda and stir gently to combine
  • Garnish with a lemon twist and a fresh strawberry.

Notes

  • Make the strawberry simple syrup ahead of time so it has time to cool. It keeps in the fridge for up to two weeks.
  • Fresh or defrosted frozen strawberries both work well for muddling.
  • Strain through a fine mesh strainer for a smoother drink without seeds or pulp.
  • Adjust the amount of syrup to taste. Start with 1/2 oz (15 ml) and add more if you'd like it sweeter.
  • For a raspberry version, swap the strawberries for raspberries and use raspberry simple syrup instead.
  • For a pretty strawberry sugar rim, mix freeze-dried strawberry powder with sugar and dip the rim of the glass.
