Strawberry Simple Syrup

This homemade strawberry syrup is sweet and flavorful, perfect for creating delicious strawberry cocktails to celebrate the summer months.

Simple syrup is exactly what it sounds like—simple and syrupy, made by mixing water and sugar and adding strawberries for delicious extra flavor.

Ingredients

  • Fresh strawberries or frozen – 1 ½ cups: If you don’t have fresh berries, no worries—frozen strawberries work just as well!
  • White sugar – 1 cup: Granulated cane sugar. Avoid light brown sugar, which will change the flavor. The amount of sugar is large but remember, it’s syrup and meant to be sweet.
  • Water – 1 cup
  • Lemon juice – a tablespoon- Fresh lemon juice enhances the strawberry flavor and helps balance the sweetness. You could use lime juice too.

The sugar-to-water ratio in simple syrup is equal parts sugar and water.

This is usually measured by volume – 1 cup of sugar to 1 cup of water. While volume measurement is less precise than weight (a cup of water weighs about 40g more than a cup of sugar), the difference is negligible for this recipe.

Instructions

  1. Roughly chop the strawberries.
  2. In a small saucepan, combine the strawberries, lemon juice, sugar, and water.

  1. Let it simmer for 5 minutes, stirring occasionally. Remove it from the heat and let the syrup cool down to room temperature.
  1. Once the mixture has cooled, place a fine-mesh strainer lined with a cloth over a bowl and pour in the strawberry mixture.

Store any leftover syrup in the refrigerator for up to 2 weeks.
