Strawberry Aperol Spritz

This strawberry aperol spritz is a great summer cocktail that is a twist on the classic Aperol spritz. It combines Prosseco, Aperol and soda water, along with the sweet flavor of strawberries.

Ingredients

Here is a rundown of what you will need for this strawberry aperol spritz :

  • 3 fresh strawberries: The delicate taste of strawberries pairs well with the orange of Aperol.
  • 1/2 tsp sugar: This macerates the berries to bring out their flavors.
  • Aperol: Brings its signature bittersweet flavor with hints of orange and herbs.
  • Prosecco: Prosecco is what gives the spritz its refreshing, celebratory feel.
  • Soda water: This slightly dilutes the cocktail and brings more fizz, which makes it lighter and more refreshing,
  • Ice cubes
  • Strawberry slice or orange slice: For garnish.
  • Fresh mint leaves: For garnish (optional).

Instructions

  1. In a large glass, add the 1/2 teaspoon sugar and the fresh strawberries.
  2. Gently muddle the strawberries in the sugar until they release their juice. You can also do this step earlier, and let time macerate the berries and bring our their juices.

  1. Pour the Aperol into the glass with the muddled strawberries and sugar

  1. Add some ice cubes. Slowly pour the Prosecco over the ice, followed by the soda water.

Variations

  • Swap strawberries for raspberries: Raspberries make a great substitute but after muddling them, I would strain to remove the raspberry seeds.
  • Add a strawberry sugar rim: For an extra touch, coat the rim of the glass in a mix of sugar and freeze-dried strawberry powder. Run a lemon or lime wedge along the edge, then dip the glass into a small plate of strawberry sugar.

  • 3 fresh strawberries, hulled and diced
  • 1/2 tsp sugar
  • 3 oz (90 ml) Aperol
  • 2 oz (45 ml) Prosecco
  • 1 oz (30 ml) soda water
  • Ice cubes
  • Strawberry slice or orange slice, for garnish
  • Fresh mint leaves, for garnish (optional)

Instructions

    1. In a large glass, add the 1/2 teaspoon sugar and the fresh chopped strawberries. Gently muddle them in the sugar, or if you've got some time, let the strawberries sit in the sugar for around 15 minutes to draw out some of the juices.
    2. Pour the Aperol into the glass with the muddled strawberries and sugar. Fill the glass with ice cubes.
    3. Slowly pour the Prosecco over the ice, followed by the soda water.
    4. Give the drink a gentle stir.
    5. Garnish with a strawberry slice or an orange slice and a few fresh mint leaves, if using. Serve and enjoy!
