Strawberry Lemonade Mocktail

Ingredients
 
 

  • 2.5 oz strawberry simple syrup homemade
  • 2 oz fresh lemon juice
  • 6 oz soda water to top, 6-8 oz total
  • ice
  • fresh strawberries and lemon wheels to garnish

Instructions
 

  • Fill two glasses with ice.
  • Divide the strawberry syrup and lemon juice between the two glasses and stir to combine.
  • Top each glass with soda water to taste and stir gently.
  • Garnish with a fresh strawberry and a lemon wheel on the rim.

Notes

Strawberry Syrup: To make the strawberry syrup: combine 1½ cups strawberries, 1 cup sugar, and 1 cup water in a saucepan. Simmer for 10 minutes, strain well through a fine sieve, and cool completely. Full recipe at strawberry simple syrup.
Make your strawberry syrup ahead of time so it's completely cool before using. It keeps in the fridge for two weeks.
Adjust the lemon juice and syrup ratio to taste - more lemon for tart, more syrup for sweet.
To make for a crowd, multiply the recipe and build in a jug. Add soda water just before serving so it stays fizzy.
Swap the strawberry syrup for raspberry syrup for a different berry flavor.
