Thyme Simple Syrup
This thyme simple syrup recipe is the easiest way to bring some herbal sweetness to your favorite cocktails or non-alcoholic drinks.

A regular simple syrup is exactly what it sounds like – Simple, and it’s a syrup. It’s a sugar water mixture, and fresh thyme sprigs are added to this thyme-infused simple syrup.
The sugar-to-water ratio in simple syrup is 1:1.
Most often, this is measured in volume – 1 cup sugar with 1 cup water. Volume is less consistent than measuring in weight (there is 40g more water than sugar in a cup), but it doesn’t make much difference in a recipe like this.
Ingredients
Here is a rundown of what you will need for this herbal simple syrup.
- Granulated sugar. This recipe uses plain sugar. You could also use brown sugar or raw sugar, but this will bring more color to the syrup and slightly change the taste.
- Water.
- Fresh thyme sprigs – Thyme is a beautifully aromatic herb, and there is a vast number of varieties. This syrup is fantastic with both garden thyme and lemon thyme.

Instructions
In a small saucepan, combine sugar and water and place it over medium heat. Let it come to a simmer, stirring until the sugar dissolves.
Once the sugar has dissolved, turn off the heat and add fresh thyme sprigs.
Let the thyme steep for at least an hour and cool down to room temperature.
Once it has cooled, balance a fine-mesh strainer and cloth over a bowl and tip in the thyme syrup.
The cloth will help remove tiny pieces and make a much clearer syrup.
Leftover syrup can be stored in the refrigerator for up to 2 weeks.
Pro tip – Pour it into ice cube trays and freeze it, so you have individual servings!

Ways to this homemade syrup
- In a summer cocktail or mixed drinks. Add it to a gimlet, iced tea, club soda, and ice, or make a thyme lemonade.

Whilst you could, the taste of dried thyme is quite different from fresh herbs. I recommend only using fresh thyme.
