The cherry gimlet is a fruity gin cocktail made with gin, fresh lime juice, and cherry simple syrup. If you’re new to making cocktails at home, this is a lovely place to start because the technique is straightforward and the ingredients are simple.

A classic gimlet is made with gin and lime cordial (or lime juice and simple syrup) and this version keeps that same character but adds cherry into the mix. Cherry syrup brings a bit of sweetness and beautiful color without overpowering the gin.
You can use store-bought cherry syrup, but I really recommend making your own cherry simple syrup if you have time.

How to make

  1. Add the gin, fresh lime juice, and cherry simple syrup to a cocktail shaker
  2. Shake until chilled, then pour into a coupe glass.

Tips

  • Use fresh lime juice. Always squeeze your limes fresh. Bottled lime juice has a completely different flavor and won’t give you that bright taste you want.
  • Chill your glass. Pop your coupe glass in the freezer for 10 to 15 minutes before making the drink. It keeps the cocktail colder longer.
  • Adjust to taste. Like it sweeter? Add a splash more cherry syrup. Want it more tart? Use a little less syrup or add a bit more lime.
