Strawberry Mojito Mocktail

This strawberry mojito mocktail is fresh, fruity, and really easy to make. It’s got muddled fresh strawberries, homemade strawberry syrup, fresh lime, mint, and soda water, and it tastes like summer in a glass.

About this strawberry mojito mocktail

This is a non-alcoholic mojito made with homemade strawberry syrup, fresh lime juice, mint, and soda water. I also muddle in 4 fresh strawberries, which gives you real fruit flavor and texture in the drink rather than just sweetness from the syrup. The two together give it a much better strawberry flavor than either would on its own.
The technique is the same as my blueberry mojito mocktail, you just muddle the strawberries first to break them down, then add the mint and press it lightly. You want just enough pressure on the mint to release the oils without shredding the leaves, which turns the drink bitter.

Key ingredients and why

  • Strawberry syrup: Adds sweetness, color, and concentrated strawberry flavor. My homemade strawberry syrup is quick to make and keeps for two weeks in the fridge.
  • Fresh strawberries: 4 per drink, muddled first before the mint goes in. They add real fruit texture and flavor that the syrup alone can’t give you.
  • Fresh mint: Added after the strawberries are muddled and pressed lightly. Keeps the flavor fresh without turning bitter.
  • Fresh lime juice: The tart element that balances the sweetness. Always fresh, never bottled.
  • Soda water: Tops the drink and adds fizz. Add as much or as little as you like.

Method

  1. Add the fresh strawberries, strawberry syrup, and lime juice to the bottom of a tall glass.

  1. Muddle the strawberries firmly to break them down and release their juice. Add the mint leaves and press lightly just a couple of times to release the oils without bruising them.

Tips

  • Muddle the strawberries first, then the mint separately. Muddle the strawberries firmly, then add the mint and press it lightly. Over-muddling mint shreds the leaves and makes the drink bitter.
  • Make the syrup ahead. The strawberry syrup needs to be completely cool before using. It keeps in the fridge for two weeks.
  • Adjust to taste. Add a touch more lime if you like it more tart, or a little more syrup if you like it sweeter.
  • Making it for a crowd. Multiply the recipe and build it in a pitcher. Add the soda water just before serving so it stays fizzy.
  • Try other berries. The same method works with blueberry syrup and fresh blueberries for a blueberry mojito mocktail.

  • 1.5 oz strawberry simple syrup
  • 3 whole strawberries hulled
  • 1 oz lime juice fresh
  • 6 mint leaves
  • 3-4 oz soda water
  • Ice

Instructions
 

  • Add the fresh strawberries, strawberry syrup, and lime juice to the bottom of a tall glass.
  • Muddle the strawberries firmly to break them down and release their juice.
  • Add the mint leaves and press lightly just a couple of times to release the oils.
  • Fill the glass with ice.
  • Top with soda water and stir gently.
  • Garnish with a sprig of mint, a fresh strawberry, and a lime wedge.

Notes

Strawberry Syrup: To make the strawberry syrup: combine 1½ cups strawberries, 1 cup sugar, and 1 cup water in a saucepan. Simmer for 8-10 minutes, strain well through a fine sieve, and cool completely. Full recipe at strawberry simple syrup.
  • Muddle the strawberries first, then add the mint and press it lightly. Over-muddling mint makes the drink bitter.
  • To make for a crowd, multiply and build in a pitcher. Add soda water just before serving.
